Brazilian Nut Fruitcake.

  • 4 eggs
  • 1 pound of Brazil nuts
  • 2 pounds of pitted dates
  • 1 pound of pecan halves
  • 1 pound of walnut halves
  • 1 pound of green candied cherries
  • 1 pound of red candied cherries
  • 1 cup of white sugar
  • 1 1/2 cups of all-purpose flour
  • 2 teaspoons of baking powder
  • 1teaspoon/2 teaspoons of vanilla extract
  • 1teaspoon/8 teaspoons of salt


  • Preheat oven to 350 degrees.
  • Grease the loaf pan and line them with waxed paper and parchment
  • Beat eggs, salt and vanilla together until very light. Stir it in baking powder, sugar and 1 cup of flour.
  • Place dates, cherries, nuts into a large bowl.
  • Dust with the remaining 1/2-cup of flour.
  • Stir in the sugar mixture.
  • Press batter into prepared loaf pans.
  • Bake for one hour.

Brazilian Rice

  • 4 eggs, beaten
  • 1 cup of cooked rice.
  • 1 pound of cheese, grated
  • 1cup/4 cups of Butter or margarine, melted.
  • 1 tablespoon of onion, chopped
  • 1 packet of Frozen spinach, chopped
  • 1teasppon/2 teaspoons of Thyme
  • 1teaspoon/2 teaspoons of Marjoram
  • 1teaspoon/2 teaspoons of Rosemary
  • 1 tablespoon of Worcestershire sauce
  • 2 teaspoons of salt


  • Cook spinach without seasoning and drain well.
  • Mix it with the remaining ingredients and bake in a 2-quart baking dish for 30 minutes at 350 degree C.
  • Cut into squares and serve.
